A trip to Vietnam without leaving home! Let's be honest, we didn't keep our New Year's resolutions in January, but why not take advantage of this lockdown period to start fresh? Mine was to become vegetarian, and for two reasons. The first was to reduce animal suffering, and the second was to do good for the planet by reducing my carbon footprint. I suspect that on my own scale it won't make a difference, but every little bit helps ;). I have to admit, it's not easy to give up meat when you're used to eating it several times a week. I needed a wake-up call, and I got it thanks to a book by Hugo Clément, a journalist and reporter for France 2, called "How I Stopped Eating Animals." This book helped me open my eyes even wider to the subject and, above all, to take the plunge. And now, the more time passes, the more I find that it's not so complicated to go meat-free. All you need are some good recipes and you're all set. So, I'm going to share a simple, 100% vegetarian recipe with you. What better dish for this than one that's perfect for the season: Spring rolls! The ingredients: Rice paper wrappers, very thin vermicelli noodles, tofu, sliced avocado, carrot, fresh bean sprouts, mint leaves. Feel free to add whatever you like; let your imagination run wild. And there you have it: - Marinate the tofu: I use soy sauce, oyster sauce, and garlic. - Cook the tofu in a pan over medium heat. - Cook the vermicelli noodles for 2 minutes in boiling water, then rinse them under cold water and drain them before making the rolls. - Soak the rice paper wrappers in a plate of warm water until they become soft. - Carefully remove them and place them on a damp cloth. - One by one, add the ingredients to the center of the rice paper. - Roll up the rice paper. Finally, I serve my spring rolls with satay sauce. And there you have it! Tip for rolling rice paper: 1- Fold the two sides of the paper that will form the ends of the roll over the filling. 2- Bring the rice paper up to the base of the filling, using your fingers to hold it in place, then gently roll tightly. Vandalism at the Michael-Friedrich-Wild School in Müllheim, January 11, 2021. In a democratic country, every citizen has the means to express their opinions through various media without violence. Attacking an institution to send a message is highly counterproductive. So what can be said when a school is targeted? Because, yes, this weekend, the school in Müllheim suffered damage. Doors were broken at the German entrance. But why attack this place where students build their knowledge and skills to become responsible citizens? A place where our children learn the values of respect for everyone, particularly through Franco-German friendship? It seems to me that we don't have to look far to find the answer. Behind this act lies an ideology that threatens us all: human stupidity, nothing more. I believe we must support each other against this scourge every day to prevent it from consuming us, because when a school is attacked, the entire school and educational community is attacked. It is unbearable and intolerable to see our school so badly damaged. Five doors were broken, and this Monday morning, I too feel a little broken… Amadeus.
